 Paleo Mexican Soup

 I love Tex-Mex.  Just something about the spices.  As you know most Tex-Mex is layered with rice and beans which is a no go in Paleo…In Primal you can have the beans but not the rice.  That is fine by me.  I like the black beans which I don’t have stomach upsets with.  Remember, take a look at your genetics, meaning your family.  If you know that your family history has eaten certain foods over the centuries you are more inclined to be evolved to that food more than someone who has no historical interaction with that food.  Eating isn’t black and white as some diets want to make you believe.  This soup is really easy.  However, since it uses a whole chicken to get the broth, I make the broth the night before so I can skim the fat off the broth.  I just don’t like the texture of the fat.  If you are ok with it, then by all means make it in one day.  I also like to take some of the broth to can for other soups, which is why I boil the chicken the day before.

 Other than that is is very easy to make.   I used cumin in this recipe.  I love cumin.  I mix it with eggs and kale for a great breakfast scramble.  You can get cumin in it’s seed form or ground.  I personally like using the ground, but if you want to use the seeds in soup make sure you strain them out.  I have found that you get a more bitter taste if you bite down on the seed.  Cumin is thought to aid in digestion, immunity, and cancer prevention.  It is actually native to Egypt but you will see it a lot in Hispanic cuisine.

On other news, I got a puppy.  Her name is Ellie.  She is half lab and half shepard.  She is now 4 months old and 45 pounds…She is going to be a good size dog!  I go with walks with her and that has helped in my goals of getting back to my pre-injury weight.  I will get there, and Ellie is helping me.  I will have photos to come.  

I am still on the Crossfit circuit.  I am trying real hard to make a min of 3 times a week along with my swimming and now walking.  It is going well.  Today was a 21-15-9 of box overs and kettle bell swings…  Normally I would be hurting after the box jumps, them and wall balls are the ban of my existence, but this time I was able to keep going with only the expected pain in my back.  It is getting better, I am getting stronger.  My doctor wants me to have surgery on my back, I do not want to.  So I am doing all I can to avoid it.  If that means I need to take a night off and spend it in the hot tub…I will.

Broth
  1. 1 Whole Chicken
  2. 1 medium onion chopped
  3. 2 large carrots chopped
  4. 2 large celery chopped
  5. 4 Garlic Cloves Halved
  6. Salt and Pepper to Taste
  7. 1 tablespoon fresh Basil
  8. 1 tablespoon fresh Parsley
Soup
  1. 2 Sweet Potatoes (skinned and cubed)
  2. 2 large Tomatoes (cubed)
  3. 1 Large Onion (sliced)
  4. 1 1/2 tbsp Cumin
  5. 4 garlic cloves diced
  6. 1 1/2 tsp chili powder
Instructions
  1. Add all Broth ingredients to large pot and fill with water till it just covers the chicken. Boil the chicken till done, about 40-50 minutes. Peel and discard chicken skin. Shred meat and set aside. Strain Broth and put the strained liquid back into large pot.
  2. Add the sweet potato to the broth and boil till they just turn tender. Add the shredded chicken and the rest of the soup ingredients. Boil till all ingredients are tender.
  3. Serve with chopped avocado and cilantro.
Notes
  1. You can make the broth the night before if you would like to strain the fat off the broth.
