Let me tell you the practice in patients is a trial….a very, very long trial! I don’t like drama, I don’t. I honestly think it is mostly a first world problem, and it isn’t going away anytime soon. As some of you know I volunteer as the Senior Vice Commander at a VFW…and it is seriously worse than high school!!! Serious! If you have ever watched Grump Old Men, that is a 3rd of what I have to deal with! Haven’t had any old fish put into the booths in the dinning room yet, but I wouldn’t put it pass them. It is constant…forget female teens, they have nothing on Old Man Grudges! Lord, help me though this.
On another, much happier note, I am running again. Not far by any means! But, hey I am working on it. I found this training guide, “30 days to 3 miles.” So I am starting it. I had started a few weeks ago and the drama at the VFW threw my entire schedule off….all of it, even my work! So, I will see how it goes. I figure I will report my progress when I make a new recipe or post an older one. I am tired of the pain when I run, I love to run. My bucket list has me completing one more triathlon. Doesn’t have to be a long one, but a good one.
This recipe is a rush put together one morning when I was craving something a little more than my scrambled eggs. It turned out really good. It was actually very easy to pick these up and eat like a tostada. A lot can be done with these to make it your own. Not much you can do to mess up a portabella! If you have a mushroom, you can pretty much add anything to it, bake it, and have a wonderful meal!
Well, an update to this post. I have a hitch in my running plans. I had torn my plantar fascia ligament. It takes a minute for these to heal, but I will get back on it once I am able. I am committed to getting back into a good jog here and there. I have too, Ellie (my lab pup) needs to run and I need to be able to keep up with her! On another, off the topic note…. Have ya’ll heard of Kickstarter? I did on a South Park episode a while back but really didn’t put any thought into it. Lately, my little healthy coffee shop has been popping back into my head. I really would like to own one. Serve healthy meals to the people of my community using the local farmers. The town I live in tries to keep people shopping local, but there really isn’t a restaurant that uses the local shops, farmers, etc… I am thinking if I could get funded on kickstarter, I might be able to bring this to the community and maybe even help educate people on the benefits of eating good simple meals. Remember, that is what I love. If you have an illness that you take chronic medication for, there is always a way of eating or a food source that will help you recover from that ailment. I want to help people with that. So maybe… I think I will look into this and see if it is visible to do. I’ll keep you updated.
- 1-2 medium sized Portabella caps
- Fresh Mozzarella or Goat Cheese
- your choice of meat, I used bacon
- 1 egg
- 1 small roma tomato
- green onion
- fresh basil, parsley
- salt and pepper to taste
- Prepare your meat till cooked to your liking.
- Remove mushroom stem and gently scoop our the filaments with a spoon.
- Finely chop tomato and add to mushroom cap
- Chop about 1 tsp of fresh basil and parsley and sprinkle on top of tomatoes.
- You can scramble or brake the egg on top of the tomato.
- sprinkle the egg with salt and pepper.
- add your meat on on top of the egg.
- add a few slices/chunks of cheese on top of that.
- bake mushroom at 325 degrees for 20-25 min or until egg is cooked and the mushroom is tender.
- add chopped green onion to the top and enjoy!
