Duck Stroganoff with Sweet Potato Gnocchi

Have you ever had a moment where you tell yourself, “Damn…just Damn.” I get those from time to time…. When I get nervous…which really isn’t very often, I talk…ramble…or better yet, blubber! LOL…Yep, I am one of those. Thank goodness it doesn’t happen often. Well I had one of those moments, and well I could just kick myself in my own ass. Ha, well I will just chalk that up to a whatever moment and move on.
On a good note, I had a nicely busy weekend. I worked some overtime, saw a movie, was able to get in 10 – 50ft climbs, spent some time with a Good Friend, went for a swim, and got some cleaning done…. Was a good weekend. I didn’t get to smoke my brisket, but I will get to it next weekend, well hopefully. I think I am volunteering with my gym to collect food for the local food pantry….Hmm, well I better check on the date I volunteered for. After talking to some of my friends, I think I might plan a camping trip to Jackson Falls for my birthday. There is some camping grounds, but a tone of sport climbing areas. That sounds like fun! Climbing and then camping with friends… Now apparently some of my friends do not camp…they laughed at me when I said “pitch a tent.” LOL, well I guess to each their own, I could do both camp or lavish it up in a plush hotel. Ok, off track…So onto the climbing. I am thinking I need to go find a new rope…I am think 100 ft should do for most of the climbs. They really didn’t look to tall but was told some are 50 ft. I also need to start reloading my rack with nuts so I could go climb lead. So excited.
So these duck breasts are from when my Mother, David and I went hunting on a very, very much freezing day. We ended up with 4 ducks and a frozen David. He fell into the water going after a downed duck….He ended up hunting the rest of the trip in his undies, a blanket and a mini heater! It was a fun day, but oh so cold. I guess if I will keep hunting with them I need to get some good waiters….
My mother was the one who first told me about Duck Stroganoff. Of, course it wasn’t Primal or Paleo…so I decided to make it so. It actually is a really simple recipe, and very very close to the real thing. I have seen others use zucchini noodle (zoodles) or just eat the stroganoff alone. I wanted to try something else. I made some Sweet Potato Gnocchi. There are a ton of recipes for Paleo Sweet Potato Gnocchi. Me, I just mix sweet potato, egg, almond flour, tapioca starch and coconut flour till I get a dough. Simple right? These are grand to eat by themselves or with other dishes that would usually be eaten with a noodle. I like them pan fried with coconut oil, but they can be boiled too.
Since, stroganoff is creamy, I thought the sweet potato gnocchi would go good with it. I know this is usually a fall meal, but I had been craving it. I had successfully made it Paleo and it is yummy. The duck gives it a more feral taste, but still very good. I hope ya’ll enjoy it as much as I do!

- 3-4 Duck Breasts
- 8 oz mushrooms, sliced
- 1-2 medium Onions, sliced
- 3-4 garlic cloves, minced
- 6-7 tbsp grassfed butter or ghee
- 1/2 cup beef broth
- 3/4 full fat coconut milk
- 2 tbsp chopped parsley
- salt, pepper, and garlic powder for seasoning the duck
- Heat cast iron skillet with 2 tbsp butter
- Season duck breasts with salt, pepper, and garlic powder. Brown in the butter till cooked through. Take breast out of the pan and let rest.
- Melt rest of butter. Add garlic till just fragrant. Add Onions and Mushrooms and sauté.
- Add Beef Broth and Coconut milk and simmer over medium heat. Add Parsley.
- Shred the duck meat and then add to the simmering pan.
- Simmer till sauce reduces.
- Serve and eat.
- You can thicken the sauce up a tad with a bit of tapioca starch. Add only a little of this as it thickens quickly.
