Strawberry Peach Chicken Kabob
Ah summer…It is easy and frustrating making summer recipes, but they are usually refreshing after all is said and done. This one I had doubts about, but hey it is better to live and fail than to not try at all. I tried and it came out good! Oh, I am doing my happy dance…it kinda resembles Snoopy’s dance. I have a partner in my dance, Ellie. Her dance is more of trying to get her tail and spinning in really, really fast circles. I wanted to do recipes with all those strawberries I picked. After researching I really didn’t see any recipes out there that used a lot of strawberries. I want to do one more meat recipe with strawberries….then I will be done for a little bit with those. I have 2 other kinda off the wall recipes in my head I wanna try and complete in the coming weeks as well.
Over the weekend I went to six flags with my Bestie and her family. It was a blast! It was also the most I have walked and stood since my surgery! Needless to say I was so very sore and exhausted! Oh and dehydrated, lol. I spent Sunday morning dehydrating with a really good breakfast, pickles, water and re:play hydration. I was still exhausted and sore through out the day, but at least I didn’t feel like my skin was crackling after I hydrated. I can’t wait to go back and have some more fun with my friends, they are really great and so caring and so very, very funny. My Bestie Sarah is afraid of drops…lol…yep, drops. We got her on the screaming eagle and as she was screaming so loud you could hear her in the next county, I was laughing my ass off!!! We pulled into the little train depot to get off the ride and I was crying from laughing so hard. She did not let go of the handle bars till the very last moment. But, this is how awesome she is…there were these tweens who really did not care about personal space. I don’t know about you, but I like my space bubble and was always taught that you respect other’s space even in line. These girls did not…they were bumping, and loud and just down right BRATS. So Sarah hung back, and moved slow, and then when they got really close, turned her head and coughed all over them! It was great! Loved it! She is Awesome!
I already went over strawberries, so what should I write about on this one…hmmm… Lets do rosemary! Oh, rosemary, rosemary…This is a great evergreen that isn’t only great in the kitchen but is used for decoration and medicine as well. If you are lucky to see a rosemary bush blossom you will get to see small purplish flowers that will spring along the stem of the bush. Rosemary has been used to aid in stomach cramps, flatulence, as well as aiding in to stimulate the appetite and increase the secretions of gastric juices. Rosemary is also used to aid in helping with headaches. When used as essential oils it is a well known antibacterial, antifungal, and antiparasitic. Rubbing it on sore areas can also help relieve muscle aches and joint pains, especially those that are suffering from rheumatism.
It has been a minute between when I started writing this post. Did a lot between then and now. Managed a hike of 7 miles, was sore as hell afterwards, but I did it! My legs are getting stronger, and stronger. I have also been released to get on my elliptical…no resistance of course, LOL. Soon, soon. Been working on my Yoga Trapeze, getting my core strong and my flexibility back, slowly, but it is getting there. Still waiting on my Omni Balls. I finally broke down and emailed them to ask when they will ship since the last email they sent said they would be mailed in May….and it is now June! The reply was in a week or two…grrrr. I did get a Fitbit Alta during this time. I really enjoy it. If you have a fitbit, friend me on the fitbit site and we can challenge each other!
- 1-2 lbs Chicken Breasts (sliced and pounded) or Chicken Tenders (pounded)
- 1/2 quart strawberries (cleaned, and halved)
- 1-2 peaches (thick sliced)
- 1 1/2 c water
- 3 tbsp honey
- 1 tbsp coriander
- 2-3 tbsp chopped fresh rosemary
- 1-2 tbsp chopped fresh sage
- Optional: Onion (halved and quartered)
- 1. Pound the chicken till you get a thin pliable piece of meat.
- 2. In a sauce pan add: Strawberries, honey, coriander, rosemary, sage and bring to a boil. Reduce heat and simmer till you get a blood red, very fragrant sauce.
- 3. Cool marinade and then pour over chicken and marinade for a minimal of 3 hours, over night if you are making ahead.
- 4. Make the Kabobs by lacing the long pieces of chicken alternating chicken, peach, chicken, onion or peach.
- 5. Grill till chicken is well cooked and peaches are browned.
